Preparation
Time: 30 minutes
Serves: 4
Ingredients:
- 1 cup chopped carrots
- 1 cup chopped celery
- ¾ cup shopped onions
- 3 Tbsp. oil
- 2 cans chicken broth
- 4-1/2 cups broccoli florets
- ½ cup instant white rice, dry
- 2 cups milk
- ¼ cup TOPPERS GARLIC & FINE HERBS
Instructions:
- Cook carrots, celery, and onions in hot oil in
a large saucepan on medium-high heat for 5 minutes
- Add broth and bring to a boil
- Stir in broccoli and rice. Reduce to medium-low
heat and let simmer 10-15 minutes
- Add soup in batches to a blender or food processor,
blend until pureed
- Return soup to saucepan, add milk and Toppers
- Cook until heated through, stirring occasionally
