Makes 1 sandwich
Preparation Time: 15 minutes
Ingredients:
- 2 ounces cooked small shrimp
- 1 tablespoon lemon juice
- 1 teaspoon Bertolli® Extra Virgin Olive Oil
- 1 sprig dill
- Ground black pepper to taste
- 3 slices whole grain bread
- 1 cup Boursin®, any flavor
- 1 cup loosely packed watercress, washed and trimmed or mesclun greens
- 3 ounces smoked salmon
Instructions:
In small bowl, toss shrimp, lemon juice, olive oil, dill and pepper; set aside. Evenly spread Boursin on two bread slices. Top one bread slice with watercress and salmon, then top with second bread slice. Top with shrimp mixture. Add remaining bread slice on top.
