Chicken en Croute with Salt, Herbs, and Boursin®

Ingredients:
  • 1 country-style chicken, approx. 3.5 pounds
  • 1 package Boursin® Garlic & Fine Herbs, crumbled
  • 1 ounce cooking salt
  • 1 pound flour
  • 2 egg whites
  • 2 twigs rosemary
  • 4 sprigs thyme
  • 1 tablespoon pink peppercorns
  • 1 tablespoon whole black pepper
  • table salt and pepper
Instructions:
Preheat oven to 400°F. Wash and wipe down the chicken. Loosen the skin by sliding your fingers along the flesh, and insert a little crumbled Boursin. Season the inside of the chicken with salt and pepper, add the rest of the Boursin, and close up the cavity. Mix together the cooking salt, flour, rosemary, thyme, peppercorns, and black pepper. Add the egg whites and enough cold water (about 4 ounces) to make a thick dough. Roll out a layer of dough on an oven dish, place the chicken on top, and cover it with the remaining dough so that it is entirely encased. Cook in the oven for 1 hour and bring the dish to the table with the crust intact, and then break away salty crust using a spoon. Carve the chicken with a carving knife and fork, and serve using two spoons or a spoon and fork.

Tip:
This recipe is also excellent with guinea fowl or a small turkey, but avoid using fatty poultry such as duck or goose. Serve with Boursin Mashed Potatoes or fried vegetables.
