Baked Stuffed Figs
Serves 6
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Ingredients:
  • 2 tablespoons butter, melted
  • 8 large ripe figs
  • 3 tablespoons sugar
  • cooking spray
  • 1 package (5.2 oz.) Boursin®, any flavor
  • 4 mint sprigs, finely chopped (optional)
  • Fig Jam (recipe follows)
Instructions:
Coat figs in melted butter and evenly cover with sugar. On baking sheet, lightly coated with cooking spray, arrange sugarcoated figs. Bake at 350°F for 10 minutes or until soft. Cut tops off of figs, reserving tops for garnish. In small bowl, combine Boursin and mint. Fill each fig with Boursin mixture and replace tops of figs. Garnish baked figs with fig jam (recipe follows).

Tip:
If you cannot track down fig jam in your local market, you can make it yourself.

Fig Jam

Serves 6 for the Baked Stuffed Figs
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients:
  • 4 large ripe figs, stemmed and chopped
  • 1/2 cup red wine
  • 2 1/2 tablespoons sugar
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Pinch ground nutmeg
Instructions:
Combine all ingredients in small saucepan. Bring to a boil, reduce heat and simmer. Stirring occasionally, simmer 15-20 minutes or until thickened and jam-like.
