- 12 thin slices of baguette (or you can substitute your favorite rustic bread)
- 3 tablespoons olive oil
- 1 package Boursin® Garlic & Fine Herbs
- 8 cups mixed salad greens
- 1/4 cup vinaigrette salad dressing
Instructions:
Pre-heat broiler. Lightly brush baguette slices with olive oil. Toast under broiler for about 1 minute or until just beginning to color. Spread Boursin over warm toasts, dividing evenly. Return to broiler for 1 minute, or until Boursin is soft.
In large salad bowl, toss mixed greens with vinaigrette dressing. Divide between four salad plates and top each one with 3 warm Boursin-topped toasts.
TIP: To be more adventurous, use your favorite salad ingredients. The toasts alone also make a super easy appetizer. Serve as they are or top with tapenade, diced tomatoes or thin strips of roasted red peppers.
