Brunch Boursin Style
Eggs with Boursin® in Tomato and Zucchini Cases
Preparation Time: 20 minutes
Cooking Time: 12 minutes
Ingredients:
  • 4 medium-sized tomatoes
  • 4 round zucchini, all the same size
  • 8 eggs
  • 4 ounces Boursin® Garlic and Fine Herbs
  • 4 tablespoons crème fraîche
  • 1 ounce butter
  • Salt and pepper
Instructions:
Preheat the oven to 375°F. Wash the tomatoes and zucchini, dry them, and cut 1/4 inch off the top of each one. Scoop out the insides with a teaspoon and season lightly with salt. Precook the zucchini for 2 minutes in the microwave (or 3 minutes in salted boiling water). Mix the Boursin and the cream with a dash of pepper. Lay out the prepared zucchini and tomatoes in a buttered dish. Fill them with half the Boursin and crème fraîche mixture. Carefully break one egg over each vegetable. Spread the remaining cream over the vegetables. Replace the tops and cook in the oven for 10 minutes. Serve immediately with some nice fresh bread.

Tip:
You can add breadsticks, made by toasting bread in a frying pan with butter or olive oil.
