Ingredients:
- 4 medium baking potatoes (about 2 pounds), unpeeled and baked
- 1/2 cup sliced green onions
- 1 package (5.2 oz.) Boursin® Garlic & Fine Herbs
- Suggested toppings: crisp-cooked crumbled bacon, shredded cheddar cheese, chopped green chilies and/or sour cream
Instructions:
Preheat oven to 425°F. Cut a lengthwise slice from top of each potato. Remove skin from top slice and place pulp in medium bowl. Scoop pulp from each potato, leaving 1/4-inch-thick shells; add to bowl. Season, if desired, with salt and ground black pepper. Add 1/4 cup green onions and Boursin; mash potatoes. Equally spoon potato filling into potato shells. On baking sheet, arrange potatoes, then sprinkle with remaining 1/4 cup green onions. Bake uncovered 15 minutes or until heated through. Garnish with suggested toppings.
